After a day, the oak relents, giving way to the earth scents of a fine Oregon Pinot noir - mushrooms, beef, tea, hints of soy and black soil.  Black cherry fruit lifts and brightens the wine through those elements of wood and earth.  Already integrated, this could grow gentler with a little bottle age; then uncork for veal with wild mushrooms."
